      👨‍🍳 Recipe: Perfectly Crispy Sri Lankan Hoppers (Appa)

      Using your The Harvest Non-Stick Hopper Pan

      Ingredients:

      • 2 cups Raw White Rice (soaked for 4-6 hours)
      • 1 cup Cooked Rice
      • 1.5 cups Fresh Coconut Milk (thick)
      • 1 tsp Yeast (dissolved in a bit of warm water and sugar)
      • 1 tbsp Sugar
      • Salt to taste
      • Optional: 1 Egg per hopper (for Egg Hoppers)

      Instructions:

      1. Blend the Base: Drain the soaked rice and blend it with the cooked rice and half of the coconut milk until you have a very smooth, thick paste.
      2. Ferment: Mix in the dissolved yeast and sugar. Cover and let the batter sit in a warm place for 6–8 hours (overnight is best) until it doubles in size and smells slightly fermented.
      3. Thin the Batter: Before cooking, stir in the remaining coconut milk and salt. The consistency should be thin enough to swirl easily but thick enough to coat the pan.
      4. Heat the Pan: Place your Harvest Hopper Pan on a medium-low flame. Since it’s a premium non-stick pan, you don't need to oil it!
      5. The Perfect Swirl: Pour one small ladle of batter into the center. Immediately pick up the pan by both handles and swirl it in a circular motion to coat the sides, letting the excess batter pool at the bottom.
      6. Steam: Cover with the tempered glass lid. Let it steam for 2–3 minutes until the edges are golden brown and crispy, and the center is soft and spongy.
      7. Release: Lift the lid and use a spatula (or just tilt the pan)—the non-stick coating will let the hopper slide right out!
